Peppery Szechuan Chilli Tempeh Cubes
Corn flour
Stir fry sauce
Green and yellow zucchini cubes
Long beans
Red and Yellow peppers, cubed
Asparagus
Salt
Chopped garlic
Chopped ginger
White vinegar
Sugar
Chopped spring onions
Prep
Sautee the Szechuan chilli Tempeh in a pan with a bit of oil for 5-7 minutes (till it starts to brown) and keep it aside.
Make a slurry with the corn flour and water and set aside.
Cube the long beans, zucchini and pimentos. Finely chop spring onions.
Recipe
Heat oil in a pan.
Add chopped ginger and garlic and sautee for 2-3 minutes.
Add zucchini and pepper cubes. Sautee for 5 minutes.
Add the stir-fry sauce and sautee for 2 minutes.
Add vinegar, spring onions and sugar.
Toss the sauteed Tempeh cubes and corn flour slurry. Stir for 2 minutes.
Serve hot
