Tawa Masala Tempeh Crumbles

A warm Mysore Tempayy Dosa on the table, and the quiet joy of knowing— just two give you 30g of protein. Comforting. Wholesome. Flavour in every bite.

Ingredients

  • 1/2 tbsp

    ghee

  • 1 tsp

    mustard seeds

  • 1 inch

     ginger, sliced

  • 2

    spring curry leaves

  • 1

    tomato, diced

  • 1 pack

    Tawa masala crumbles

  • Salt and pepper to taste

  • Dosa or Quinoa Dosa

  • Red garlic chutney

Instructions

  1. Heat your aromatics: Heat the ghee in a pan on medium flame. Once hot, add mustard seeds and let them splutter. Add ginger slices and curry leaves, sauté until aromatic.

  2. Cook the Tempayy: Add the Tawa Masala Crumbles straight from the pack. Sauté everything together for 4–5 minutes on low flame, letting the flavors meld beautifully.

  3. Add veggies: Toss in the diced tomato. Season with salt and pepper as needed. Stir well and cook for another minute.

  4. Top this over hot dosa, garnish with onion and coriander and serve hot with chutneys.

Tips

  1. Let the Tempayy slow-cook on low flame for 4–5 minutes. It deepens the flavour and gives you that soft, savoury bite.

  2. No Crumbles? Just finely chop Tempayy cubes and follow the same steps.

Tempeh is one of the best natural vegetarian sources of protein with a high protein and fibre content thanks to the natural fermentation process. For even the most inexperienced cook, the preparation of Tempeh is simple: simply unbox and use as cubes or mince the Tempeh, season/ marinate it liberally with your choice of spices, and sautee the Tempeh with a bit of oil for five to seven minutes. ...

Tempeh is plant-based, dairy-free, and gluten-free, with 19 grams of protein per 100 grams and only 1.6 grams of net carbs.

It has a mild nutty flavour and a slightly spongy, solid texture. Because the tempeh cubes absorb flavours well , we recommend seasoning even the flavoured cubes if you want the flavour to pop.

Thanks to the porous nature of tempeh, it absorbs the flavours of whatever it's mixed with and helps make a tempeh biryani that is quick to cook yet packs a savoury punch.
